Potatoes a Hot Production Food in Peru

This October Peru outdid itself in it's potato crop. According to the National Institute of Statistics and Informatics (INEI), potato production increased by 9.1% from October 2013. This October Peru produced a whooping 236,678 tons of potatoes.

This increase in potato production is due to many regions converting more acreage into potato fields. Ica increased production by an amazing 116.4%. The Ica region, along with Huánuco, La Libertad, and Cajamarca together produce 54% of Peru's national potato production.

In Cusco, production was increased by 209.5%, so if you feel like the markets are overloaded with papas it isn't just your imagination. What to do with all these potatoes? We'll as Sam from the Lord of the Rings advises: "Po-ta-toes! Boil 'em, mash 'em, stick 'em in a stew. Lovely big golden chips with a nice piece of fried fish." While mashed potatoes might not be the Peruvian dish of choice, a soup with boiled potatoes and a second of fried trout and more boiled potatoes hits the mark exactly. Enjoy!
